Every year my friends Michael and Deidre throw a Christmas Party called "Grinchmas". The theme is the Grinch and we watch the Animated Grinch and the horrid Jim Carry movie.

But it's a potluck and this year I went looking for something different to bring and went to my new favorite evil site "Oh Bite It" and lo and behold, she had a thing called "Grinch Cake" Which I absolutely had to try and subject my friends to

Ever since a bunch of Australians introduced me to a little bit of chocolatey decadence many years ago at Pennsic, I have been a fan of the Tim Tam Cookie. I became very excited to discover a store near my sister in Maryland sells them and I get several packages when I go to visit.

So of course I was intrigued when I came across a recipe on my facebook wall called a Tim Tam Cake.

But, I'm not enough of a chocolate fan to make one for just me and waited for the right time. That came when my company's holiday party had a dessert contest. So I broke out the recipe and tried it.

Taco Chicken

4 boneless chicken breasts
1 package taco seasoning
1 can cream of chicken soup
1 jar salsa

line bottom of crockpot with chicken breasts and sprinkle with full package of taco seasoning. Cover with soup and salsa.

Cook on low for 8-9 hours.

Shred. Serve with Tortillas.


I don't know where I got this recipe from. I found it in a folder I had from my old job so I think a former co-worker gave it to me.

I didn't have an tortillas so I made up rice and topped it with the chicken. I also added some shredded cheddar cheese.

It smells amazing and tastes pretty good too. Though next time I will use medium heat salsa rather than mild. I would like a bit more kick.

Rating: 4.5 out of 5. Definitely going into rotation.
