Ok, a couple people have commented.

Tonight's dinner was an experiment (having never made a homemade hashbrown before) so I guess it counts



8 slices of reduced fat/reduced sodium bacon
1/4 cup chopped fresh cooking onion
1 large yukon gold potato, shredded
black pepper
Emeril's Bayou Blast Seasoning
Salt
Extra Sharp Cheddar Cheese

Fry up the bacon until really crispy. remove to paper towel and let cool. Once cool, crumble to little bits

Sweat onion in bacon grease until mostly cooked through.
Add potato and bacon crumbles.

Add about 9 shakes of pepper from the tin and 2 shakes of the Bayou Blast seasoning.

Brown the mix until desired doneness (Me I like my hashbrowns pretty crisp)

Just before removing from pan, shred cheddar cheese over all, allow a moment to melt. Give a dash of salt

Transfer to dish and eat.

considering I do not like hashbrowns I really ended up liking this. For some reason I was craving fried potatoes, bacon and cheese all day and just ended up giving in to the craving and this is what I ended up making.

I will actually keep this in the rotation of foods for when I need something but dont' know what.
