I woke up this morning wanting muffins. Now, I"ve never made muffins really. Not the cake like goodness. I've made "Muffins" that were really more biscuit than muffin. Even back when I was baking in 4-H I never did muffins. I did coffee cakes and the like instead.
But I figured this morning would be a good a day as any to try.
So I broke out the cookbooks and found one that sounded interesting. And I had all but one ingredient in the house and the one I didn't have I didn't really need.
So thus was GRE 2010 #2

1/2 pound bacon (10-12 slices)
Vegetable Oil
1 egg, beaten
3/4 cup milk
1 3/4 cups all-purpose flour
1/4 cup sugar
1 Tbsp baking powder
1 cup (4 ounces) shredded cheddar cheese
1/2 cup crunchy nutlike cereal nuggets
Preheat oven to 400ºF. In large skillet, cook bacon over medium-high heat until crisp. Drain, reserve drippins. If necessary, add oil to drippings to measure 1/3 cup. In small bowl, combine 1/3 cup drippings, egg and milk; set aside. Crumble bacon; set aside.
In large bowl, combine flour, sugar and baking powder. Make well in center. Add drippings-egg mixture all at once to flour mixture, stirring just until moistened. Batter should be lumpy. Fold in bacon, cheese and cereal. Spoon into buttered or paper-lined 2 1/2 inch muffin cups, filling about 3/4 full. Bake 15-20 minutes or until golden brown. Remove from pan. Cool on wire rack.
Makes 12
My variations
I used egg substitute rather than a real egg
I left out the cereal.
Did not need the oil to bring drippings up to 1/3 cup (I cooked up the whole pound but only used half in the recipe


Thoughts
I really liked the way the savory of the bacon and cheese played with the inherent sweetness of the muffin. I honestly don't think it needs the cereal
They were rather tasty and while not something I will make all the time, these may end up in the rotation for Sunday Morning Staff Meeting Breakfasts (TM).

Once I can get No sugar (etc) bacon Im planning on putting some of that in.
these really look great! Wish I could smell them.
