Every year my friends Michael and Deidre throw a Christmas Party called "Grinchmas". The theme is the Grinch and we watch the Animated Grinch and the horrid Jim Carry movie.

But it's a potluck and this year I went looking for something different to bring and went to my new favorite evil site "Oh Bite It" and lo and behold, she had a thing called "Grinch Cake" Which I absolutely had to try and subject my friends to

Ever since a bunch of Australians introduced me to a little bit of chocolatey decadence many years ago at Pennsic, I have been a fan of the Tim Tam Cookie. I became very excited to discover a store near my sister in Maryland sells them and I get several packages when I go to visit.

So of course I was intrigued when I came across a recipe on my facebook wall called a Tim Tam Cake.

But, I'm not enough of a chocolate fan to make one for just me and waited for the right time. That came when my company's holiday party had a dessert contest. So I broke out the recipe and tried it.

Taco Chicken

4 boneless chicken breasts
1 package taco seasoning
1 can cream of chicken soup
1 jar salsa

line bottom of crockpot with chicken breasts and sprinkle with full package of taco seasoning. Cover with soup and salsa.

Cook on low for 8-9 hours.

Shred. Serve with Tortillas.


I don't know where I got this recipe from. I found it in a folder I had from my old job so I think a former co-worker gave it to me.

I didn't have an tortillas so I made up rice and topped it with the chicken. I also added some shredded cheddar cheese.

It smells amazing and tastes pretty good too. Though next time I will use medium heat salsa rather than mild. I would like a bit more kick.

Rating: 4.5 out of 5. Definitely going into rotation.

I had first seen something on Pintrest that sounded interesting. But the link was no good. Which meant searching.

I eventually found a "recipe" that matched.

I've made these before, but I"m putting it here so I can find the recipe when I need it.

Ingredients

1 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
1 tbsp sugar
1/4 cup butter, chilled, cut into small pieces
5-6 tbsp milk (any kind)
1 tsp vanilla extract
1/4 - 1/3 cup nectarine, peeled and diced

Edit Steps

Preheat oven to 400ºF. Line a baking sheet with parchment paper.

In a medium bowl, whisk together flour, baking powder, salt and sugar. Add butter and toss to coat. Using your finger tips, rub the butter into the flour mixture until it resembles very coarse sand. A few large bits are all right, but try not to have any pieces larger than an average pea.

Add 5 tablespoons of milk and the vanilla and stir. Mix in nectarines. The small amount of juice given off the the fruit should moisten the mixture as much as it needs to form a ball, but if it doesn't, add remaining tablespoon of milk.

Divide dough in four pieces and place on baking sheet. Sprinkle with a bit of sugar, if desired.

Bake for 16-19 minutes, until scones are a light golden color. A toothpick should come out clean, but color is a reliable indicator for these.

I was hosting Sunday brunch this weekend. I usually make the cheesy hashbrowns that I did as a GRE in 2010 (http://baronessekat.livejournal.com/626436.html). But I came across one for the slow cooker that sounded like a wonderful thing so I could use my oven for other things (like Nectarine Scones and stuff). So...
