As some know - I'm allergic to eggs. As a result most breakfast casseroles are a big No for me.

But while looking for things to do with left over chicken I found one that does no eggs. So here it is.

INGREDIENTS (Nutrition)

* 1 (10.75 ounce) can condensed cream of chicken soup
* 1 (16 ounce) container sour cream
* 1 (2 pound) package frozen hash brown potatoes, thawed
* 1 cup cubed, cooked chicken meat
* 1 cup diced ham
* 1 onion, chopped
* 3/4 cup shredded Cheddar cheese
* 1 cup crushed potato chips
* 1/4 cup butter, melted

DIRECTIONS

1. Combine undiluted soup, sour cream, hash browns, cubed chicken and ham, onions, and cheese. Pour into a lightly greased 9 x 13 inch pan.
2. Bake at 350 degrees F (175 degrees C) for 30 minutes. Top with crumbs, and drizzle with melted butter or margarine. Bake for another 15 minutes.

Thoughts Too much to do in one bowl. I think if I do it again, I will mix the soup and the sour cream, THEN mix in the other stuff.

Some of the comments on the page said that they onions were not cooked enough for the time given, so I cooked up some bacon and cooked the onion in the bacon grease.

LOTS of dairy. Not something to do on a bad GI day.

It was ok. But I can see it for a group breakfast or as they suggest for pot luck type things.

Probably won't go into my rotation. But was worth a try.

I actually didn't use the potato chips as I didn't have them or corn flakes. I just used unseasoned breadcrumbs

Not as crispy but did add a nice texture change.
