GRE 2016 #1: Ciarra's BBQ Poultry
Every year at Pennsic, I look forward to Ciarra's night to cook for the camp as she makes this dish she calls BBQ Turkey.
I never think of it as BBQ (as to me that requires smoking, application of a grill and usually some sort of sauce). But I find it delicious and I finally broke down and asked for the recipe, which she sent me last week.
Turkey Barbecue
1 turkey (about 12 pounds)
½ cup butter or margarine, melted
2 T Worcestershire sauce
2 T steak sauce
1 T garlic powder
1 T onion powder
1 T lemon-pepper seasoning
1 T pepper
2-3 teaspoons cayenne pepper
¼ t salt
1 cup chicken broth
1. Place turkey, breast side up, in a rack on a roasting pan. Combine the butter,
2. Worcestershire sauce, steak sauce, and seasonings; rub 3 tablespoons over turkey. Cover and refrigerate remaining butter mixture. Bake turkey.
3. Remove turkey; pour drippings into a saucepan. When turkey is cool enough to handle, remove meat from the bones. Shred (or grind) turkey and return to the roasting pan. Add broth and remaining butter mixture to the drippings; bring to a rolling boil. Pour over the shredded turkey.
4. Cover and bake at 325 for 25-30 minutes until heated through.
My variation
1. I used paprika instead of cayenne pepper as that's what I had in the house.
2. I used 10.5 pounds of boneless chicken breasts as it was cheaper than buying a turkey in the middle of January
3. I decided to cook it in the crockpot on low for 8 hours and used the entire sauce on it while it cooked. I then pulled the chicken out, shredded it like the recipe called for and returned it to the sauce to soak up the flavor goodness.
Thoughts
While somewhat different than Ciarra's final results, it was delicious and made a TON of meat that I was able to portion up and will freeze, along with being able to have some for dinner throughout the week. This may also end up as something I consider for contributions to the every popular potluck that the local SCA chapter is so fond of.
