GRE 2016 #1: Ciarra's BBQ Poultry

I never think of it as BBQ (as to me that requires smoking, application of a grill and usually some sort of sauce). But I find it delicious and I finally broke down and asked for the recipe, which she sent me last week.

Invited J&P over on Friday to experiment on them again. Well, I had promised P that I would cook 4 meals over the next bit of time as a "thank you" for agreeing to let J come be my travel companion in two weeks to Vegas.
I've had this one on my Pintrest for a while and decided that this was just as good at time as any to try it.

My sister was in from out of town for the weekend and she had remarked that one of the recipes I had put to my pintrest page sounded good. So since she was here I decided to try it.

The grocery store had whole roasting chickens on sale for such a good price I really couldn't pass it up, despite not currently having a working oven. While it would have fit in my little convection oven, I wanted to try something else.
So off to the internet I went and found how to roast a chicken in the slow cooker.

I ran into a problem just before Easter. My oven stopped working (and that's something I do need to get looked at). But that left me with a 9 lb. ham that would not fit in my little convection oven to cook for 6 people who were coming for a pre-Easter get together.

Taco Chicken
4 boneless chicken breasts
1 package taco seasoning
1 can cream of chicken soup
1 jar salsa
line bottom of crockpot with chicken breasts and sprinkle with full package of taco seasoning. Cover with soup and salsa.
Cook on low for 8-9 hours.
Shred. Serve with Tortillas.
I don't know where I got this recipe from. I found it in a folder I had from my old job so I think a former co-worker gave it to me.
I didn't have an tortillas so I made up rice and topped it with the chicken. I also added some shredded cheddar cheese.
It smells amazing and tastes pretty good too. Though next time I will use medium heat salsa rather than mild. I would like a bit more kick.
Rating: 4.5 out of 5. Definitely going into rotation.

But I came across one for the slow cooker that sounded like a wonderful thing so I could use my oven for other things (like Nectarine Scones and stuff). So...

Sep. 12th, 2009 07:26 amLast night was a night of experiments for our Friday Family Dinner. We opted to wait for the Duchesses to come in before eating so that we could have an extended family dinner.
We had:
( Schweinbraten (Adapted some for Slow Cooker )
And the girls and I talked about what to have with the pork and we all came to the agreement. Something we have only had a handful of times as events.

OMG. WILL DO AGAIN. Though I think I will try to get apple cider next time and cut back on the vinegar by a Tbsp.
