Great Recipe Experiment #3 & #4

From the coupon section in the paper this past weekend
INGREDIENTS:
1 lb. ground beef
1 jar (1 lb 10oz) pasta sauce (They suggest Ragu old world style)
2 large green and/or red bell peppers, coarsely chopped
1 1/4 cups water
1 cup instant rice
DIRECTIONS:
1. in 12-inch nonstick skillet brown ground beer; drain, if desired. Stir in remaining ingredients. Bring to a boil over high heat. Reduce heat to medium-low and cook covered 20 minutes or until liquid is absorbed and rice is tender.
VARIATIONS:
I used ground turkey rather than ground beef.
RATING: 4. I liked it. Though to me it tasted just like my mother's ASpanish rice without the bacon. It was easy and filling.

INGREDIENTS
3 each ripe peaches , halved and pitted
1 tablespoon brown sugar
2 teaspoons lemon juice
3 cups nonfat vanilla frozen yogurt
6 each gingersnaps , crumbled (optional)
DIRECTIONS
1. Preheat oven to 425°F. Coat a baking sheet with cooking spray.
2. Toss peach halves with brown sugar and lemon juice, and place them cut-side-up on the prepared baking sheet. Roast until the peaches are tender, 20 to 30 minutes. If the juice on the pan begins to burn, add a little water and loosely cover the fruit with foil.
3. Top each peach half with a 1/2-cup scoop of frozen yogurt and a sprinkle of crumbled gingersnaps (if using). Serve immediately
VARIATIONS:
I made only one peach so I divided the recipe in third. Also I ended up quartering the peach rather than halving as I forgot what a pain it is to halve a peach. I also didn't have ginger snaps so I used a graham cracker. I also used vanilla ice cream rather than frozen yogurt because that's what I had in the house
