starkymonster over the last year has been doing a challenge for herself to try 50 new recipes.
I really liked that idea and said I was going to make that my resolution this year.
Well I started early.
With sis in town I wanted to make something for dinner that was easy but yummy and different.
From one of the Kraft quarterly magazines I got this recipe:
4 small boneless skinless chicken breasts
1/4 cup Italian Dressing
1/4 cup Grated Parmesan Cheese
Place all ingredients in a large resealable plastic bag; seal bag. Turn bag over several times to evenly coat chicken. Lay flat so chicken does not over lap
Cook now: refrigerate chicken 30 minutes to marinate. Preheat oven to 425ºF. Remove chicken from Marinade. Discard bag and remaining marinade. Arrange chicken on foil covered baking sheet. Bake chicken 20 minutes or until cooked through.
Cook later:Freeze uncooked chicken mixture up to 3 months. Remove chicken from bag. place on foil covered baking sheet. Preheat oven to 350ºF. Bake chicken 1 hour or until cooked through.
I served it with Uncle Bens golden chicken flavored 90 second rice. Both my sister and I liked how the chicken came out. Tangy without being overpowering. Crispy without being crunchy. And very moist.
I would say recipe #1 was a success.
