Gumbo Casserole
from Campbell's Kitchen
Prep Time: 15 min.
Bake Time: 35 min.
Ingredients:
2 cans (10 3/4 ounces each) Campbell's® Condensed Chicken Gumbo Soup
1 soup can water
1 tsp. dried minced onion
1/2 tsp. Cajun seasoning (used Essence by Emeril Bayou Blast)
1/2 tsp. garlic powder
1 cup frozen okra, thawed
3/4 cup uncooked instant white rice
1/2 lb. cooked ham, diced (about 1 1/2 cups)
1/2 lb. cooked shrimp, peeled and deveined
Directions:
Heat the oven to 375°F. Stir the soup, water, onion, Cajun seasoning, garlic powder, okra, rice, ham and shrimp in a 2-quart casserole.
Bake for 35 minutes or until the gumbo is hot and bubbling. Stir the gumbo before serving. Serves 4.
Tip: Try stirring in a little diced andouille sausage for even more Cajun-style flavor!
Note: I left out the Okra as I have yet to meet an okra that I can stand.
Not bad. I'd like a little more cajun kick to it. Next time I may add bacon (cuz everything is better with bacon) to give it depth and maybe a bit of tobasco sauce.
