I am always looking for a crunchy, salty snack and one of my new favorites are these quick, easy carrot chips. They come out crispy and delicious and are the perfect afternoon snack served with Skinny Ranch or just eaten on their own. I like mine fresh out of the oven (like a warm potato chip) but they also taste great once they have cooled entirely. These also work great with a variety of spices although I am partial to just salt and pepper.

Weight Watchers Carrot Chips
Points: 1 weight watchers pointsplus
Servings: 2
Serving Size: 1/2 of recipe
Nutritional Info: 44.9 calories, 2.4 g of fat, 5.8 g of carbohydrates, 1.7 g of fiber .6 g of protein

Ingredients
2 medium carrots
1 tsp olive oil
Salt and pepper to taste

Instructions
1. Preheat oven to 350 degrees.

2. Using a vegetable peeler, peel the carrot to create long flat pieces and place into a large bowl. Toss carrots with olive oil, salt, and pepper.

3. Lay out flat on a baking sheet covered with parchment paper. Bake for 6 minutes on the rack closet to the heat source and then move to a lower rack for 6-8 additional minutes until crispy but not burnt. Let cool for at least 3 minutes.

Thoughts:

I had to alter the cooking time. the first batch I did burned to a crisp. Still playing with it but with the second batch I did the 6 minutes in the middle of the oven. While not fully crisp it was better. Will continue to play with it.

I liked the flavor. All I used was canola oil (out of olive) and sea salt. But the flavor was sweet and tastey.

And I ran the recipe through the recipe builder on weight-watchers online and they are actually 1 point per full carrot instead of 2.

This may be a snack that happens on a regular basis.

UPDATE:
kept playing with temperature of the oven and stuff. What seems to work is putting a cooking rack on the cookie sheet, putting the cookie sheet close to the top of the oven at 300ºF (ish) and keep checking until they are done (about 15 minutes or so)

it's one point per serving, which is the equivalent of one carrot's worth of chips.

I like them. I have to play more with the baking process. Next time I'm going to try baking them on cooling racks on cookie sheets to see if that helps them crisp better.

Kale chips are brilliant and, while the texture is wrong, the flavor is *exactly* like potato chips!
