GRE 2015 #3: lasagna soup

Ingredients
1 pound ground beef
1 small onion, chopped (about 1/4 cup)
1 teaspoon minced garlic
1/4 teaspoon dried parsley flakes
3 1/2 cups Swanson® Beef Broth or Swanson® 50% Less Sodium Beef Broth
1 can (about 14 .5 ounces) diced tomatoes
1/4 teaspoon Italian seasoning, crushed
1 1/2 cups uncooked mini lasagna noodle-shaped pasta (mafalda) or rotini pasta
1/4 cup grated Parmesan cheese
Directions
1 Cook the beef, onion, garlic and parsley in a 3-quart saucepan over medium-high heat for 10 minutes, or until the beef is well browned, stirring often to separate meat. Pour off any fat.
2 Stir the broth, tomatoes and Italian seasoning in the saucepan and heat to a boil.
3 Stir the pasta in the saucepan. Reduce the heat to medium and cook for 10 minutes or until the pasta is tender. Stir in the cheese. Serve with additional cheese, if desired.
What I did different
1 I used ground turkey as I almost exclusively buy that instead of ground beef.
2. I omitted the parsley because I never seem to have any in house when I need it
3. I used reduced fat shakey cheese instead of grated parmesan because again, that's what I had in the house.
Thoughts
Very easy and hearty soup. I liked the flavors and found they were even better the next day. This is something that will probably go into semi-regular rotation just due to the ease of it.
