GRE 2105 #5 - waffles

The other weekend I wanted to make waffles for the Sunday after an event. I got up early to make them for my houseguest and discovered... I was out of baking mix. But I remembered my mother never made waffles with baking mix and I even remembered what cookbook she used. So, what are friends for if not to experiment culinarly on them?
From the Mary Margaret McBride Encyclopedia of Cooking, Deluxe Illustrated Edition (c) 1959 by Homemakers Research Institute.. page 181
2 cups sifted flour
3 tsp baking powder
2 Tbsp sugar (optional)
1 tsp salt
3 eggs, separated
1 1/4 cups milk
4 Tbsp melted shortening
*Sift dry ingredients
*Beat egg yolks. Add milk and melted shortening. Beat thoroughly.
*Add to dry ingredients. Combine quickly.
*Gently fold in egg whites, beaten stiff but not dry.
*Bake 4 to 5 minutes in hot waffle iron. Makes 5 to 6 waffles.
Variation I used melted butter instead of shortening due to never having it in the house. I also added a splash of vanilla.
Thoughts It worked. I made waffles. I think I added too much vanilla. Meirwen says there is no such things. Also, my waffle iron is smaller so I had closer to 10 waffles when we were done.
Good to know I can make them when I want and do not have baking mix.
